I’ve been traveling like a mad woman the last 4 weeks – Austin, Chicago, China, Houston, Salt Lake City and soon Israel. I’ve seen more airports than I care to admit, and eaten more bad airport food to last a lifetime. I’ll admit, the only time I ever eat McDonald’s breakfast sandwiches are at the airport, so it’s turned into kind of a guilty pleasure, but that’s honestly because all of the decent snacks are SO. EXPENSIVE. Any person in their right mind realizes the insanity of spending $9 on a single serve bag of almonds or $11 on a small bag of jerky. Although you know I love my jerky…
Then I met Ricky over at Think Jerky, and the world of jerky never looked the same. I’ve been around the jerky block enough times to know the difference between awesome jerky and possum jerky (that’s weird, I hope there’s no such thing as possum jerky, I was just looking for a word to rhyme with awesome).
Awesome jerky is soft with enough of a chew to make it feel substantial but not that much where your jaw clicks and pops with each bite. You know what I’m talking about it. Awesome jerky is packed with flavor, and it’s the kind of flavor that builds as you eat it. First it’s sweet, then you get the salt and the lingering spice. Awesome jerky is like a good relationship, evolves and grows over time. And Think Jerky, my friends, is seriously awesome jerky.
So in preparation for my next round of travel, I thought I’d whip up my own version of a trail mix with jerky as the star. The great thing about this Jerky Trail Mix is how versatile it is. Because the jerky is really the star, I wanted to add ingredients that would compliment the flavor profile. I was working with Sriracha Honey – sweet, spicy with an Asian flair. So I reached for the sesame sticks for the heartiness and salt, honeyed cashews for their sweetness and buttery texture, wasabi peas for their crunch and spice (oh so spicy!), and dried cherries for their perfect little sweet and sour pucker balance.
JERKY TRAIL MIX
(serves 5, 1/2 cup each)
1/2 cup chopped Honey Sriracha Turkey Jerky
1/2 cup sesame sticks
1/2 cup honey roasted cashews
1/2 cup wasabi peas
1/2 cup dried cherries
Toss all ingredients in a bowl, and serve! (How easy is that?)
Olan for about 1/2 cup per person/serving, and feel free to up the ratio of ingredients based on what you personally love/hate. Aim for a mix of spicy, salty, sour and sweet.
