They say that a person wearing red stands out more than a person wearing blue or black. So I’m not surprised that some of the most tantalizing fruits and veggies are red too. Strawberries, pomegranates, tomatoes, cherries. And radishes. You can’t forget those radishes.
If I were a designer, I would 100% pull my inspiration from food. Kind of like Franc Fernandez and Lady Gaga’s infamous meat dress, but maybe a little more appealing. Like Agatha Ruiz de la Prada.
These Deviled Radishes with Herbed Feta Filling would be earrings: the perfect accessory to summer barbecues, vegetarian dinners, spring cocktail parties. What I love most about them is the balance of natural spice from the radish and salt from the feta. Not to mention the crispy and creamy dream team of textures. They’re super fast to whip up and colorful to boot. Impressive and creative (or so I’d like to think ) :), these Deviled Radishes with Herbed Feta Filling are a must try.
DEVILED RADISHES WITH HERBED FETA
(serves 12-15, appetizer)
2 bunches radishes
for the herbed feta dip:
6 ounces crumbled feta, about 1 cup
1 cup part skim ricotta cheese
1/4 cup fresh dill fronds
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons water
1/2 teaspoon ground black pepper
Start by prepping the radishes. First, trim the green tops off of the radishes, leave about 1/2 inch to hold onto when eating. Wash the radishes thoroughly. Prep a large bowl with water and ice. Using a sharp knife, slice the radishes in half. Cut a thin slice off the back of each radish – this will give them the flat bottom they need to sit steady on your serving tray. Then, using a small melon baller or 1/8 teaspoon measuring, scoop out the middle of each radish half. Once scooped, place the radish in the ice water to keep fresh and vibrant. Set aside.
For the herbed feta filling (but really it’s a dip!), place all the ingredients in a food processor. Pulse until evenly incorporated, scraping down the sides of the bowl once throughout.
To assemble, scoop about 1/2 teaspoon herbed feta filling into the hole of each radish. Place on a serving dray and enjoy immediately!
